It's one of those dishes I never make the same way twice. I tend to google and read different recipies and take the bits and pieces I like from a few, depending on mood.

Sometimes I might do a middle eastern inspired one with Lebanese aggplant, or a greek style one or an Irish Stew style.

While I'm at it, I can't recommend enough introducing Kampot pepper into your dishes.
I brought a fair bit back post a pre-Covid Cambodian trip.
White Kampot is amazing on eggs any way you do them. I throw a liberal dose into my soups.

It needs to be part of your culinary lives.

I'm going to get some Osso Bucco into the slow cooker and Chilli Con Carne into the electric frypan today.
Anyone have any signature additions to theirs worth considering?

When I have the time and inclination, I make Texas Red in the cast iron camp oven on the gas stove.

Chuck or gravy steak instead of mince and instead of tomatoes, roast some red capsicum and other peppers, blister the skin and peel it off, then chuck them in the blender for the sauce. Yum. No beans in Texas Red.

Back in Melbourne after a couple of days in Toc, felt like Lambs Fry so went shopping. 2 supermarkets and 1 butcher, no luck. The first butcher was sold out but the second had some in the freezer so grabbed them, but also picked up some Osso Bucco on special, so thats dinner tonight.
