You buy the trout already smoked yeah? That sounds really good!

I made chicken wraps with a lemon pepper Aldi kit, was a bit hot so I chucked in a can of pineapple, OMG it was awesome, EVERYONE liked it and lived. AND I know how I did it!

The trout is a "hot smoked trout" in a sealed packet kept refrigerated. Looked up Buxton trout stockists (they're a victorian mob). Closest to my place was a deli in Bentleigh, Cost about $12 - and you basically deskin it, debone it (it flakes in your hands). This lot might be closest to you. West Footscray, Diannes Delights - (03) 9314 1887, http://www.diannesdips.com.au/

Also quite a few at the Queen Vic market

I bought about 450 gms in the trout pkt. - taking the skin, head & bones out would leave about 300 gms that the recipe suggests

I cooked a leg of lamb in the Weber last night. Gave it a few good smokes with some rosemary branches during the cooking time and it came out superb!

had some takeaway last night but tonight I feel like a nice piece of steak so rather than having to scrub up, go out and pay through the nose for someone else to prepare something, I can do better at home anyway.

So got a 500g Rib eye on the bone. Gonna do that medium rare on the big corrugated hotplate on the gas range. Throw on with that a corn on the cob still in the husk, some fresh baby asparagus, nuke a couple of baby potatoes and tip a tin of Mushrooms in butter sauce over top of the steak.

Season with some cracked black pepper and my home made mix of assorted dried hot chillies mixed with rock salt in a grinder.

The world fireworks championships are on tonight, So the dog safely in the village (she is petrified of fireworks and has 6 puppies) we will head down to the beach and snack on Thai vendor food. Off the grog for a while so probably have to do with lemon soda but the BBQ kebabs and banana pancakes are pretty good.
