Can’t live on takeaway when there’s only about 3 takeaway options in town, it’d get very boring very quickly.
However at the same time I definitely ain’t cooking up any MasterChef dishes, not worth it for one person and no dishwasher 😂😂 |

Yeah but I’m lazy 😂😂
Plus the sink and really the kitchen where I’m staying are bloody small so it’s a pain.
So I’m pretty much on things that can be done in one frying pan, one oven tray or one small saucepan |

Mum likes a bit of corned beef and up in Darwin she had a Reuben sandwich for the first time in her life and loved it. So when I did the grocery shopping I grabbed a corned silverside and let her cook it today, her way.
Then after work today I walked to the local IGA and grabbed some Rye Bread, Sauerkraut and Swiss Cheese, so Corned Beef and Veges for dinner tonight and Reuben's for lunch tomorrow. |

i made an amazing sticky date custard merangue cake yesterday, to die for, lot of work though!
been cooking a lot of big platters full of roast vegies so we have them for lunch too _________________ You cant fix stupid, turns out you cant quarantine it either! |

Cooking myself a Fathers Day Dinner
Lamb Shanks in the crockpot since before lunchtime
Saute some thinly sliced cabbage with bacon in butter for the base
Lebanese eggplant, zucchini, onion and capsicum in a casserole dish in the convection oven for the side.

Mum really liked the fathers day dinner, I'm doing that cabbage and bacon again.

Yesterday made Veg bolognese in the slow cooker:

Button mushrooms can be used instead of swiss browns (or 50/50). Yesterday I used 200g button mushrooms and a zucchini instead of swiss browns. Zucchini added a bit more liquid to the dish but I just cooked it bit longer to thicken up.
Kalamata olives have a very strong taste so I leave them out and add when serving. Good for those like the 25 year old who do not like olives.
Leftovers keep in the fridge for a couple of days and it freezes well. _________________ If you are foolish enough to be contented, don't show it, but just grumble with the rest. - Jerome K Jerome |
