What does everyone else do to use up the Xmas leftovers?

I'm usually eating turkey and ham for a week, this year I'm doing it a bit different.

Pulled the turkey breast out and sliced it for sandwiches ort cold meat and salad. Pulled the carcass apart and got a couple cups of meat which I diced and I'm using tonight to make fettuccine Alfredo or carbonara or whatever the one with the cream, parmesan and mushrooms is. Gonna use some of the ham instead of bacon too.

Put the rest of the turkey carcass in the big stock pot with some water and making Xmas soup with a Thai Twist. Put in the turkey, some onion, ginger, garlic, Thai seasoning, chili, celery, carrot, chopped up the leftover roast potatoes and pumpkin. See how it turns out once I boil it for a few hours, pull the bones out and simmer for a while to reduce a bit. Haven't decided yet whether to leave it as a broth with bits or hit it with the stick blender.

^I don't have many - I did 4 kgs of roast spuds and there were only 2 sad little spuds left! Shocked

Channeling the ancestors I think who warned them of a potato famine! Razz

Little bit of meaty stuff left went home with mum and the sister.

Jeebus. I obviously over catered.

I'm planning on dicing the leftover roast pork tomorrow (if I can still walk after helping the son move house) and making a pork Chili. Re-cooking it buys you an extra 3 days in the4 fridge.

Hahahahahaha!

Ate some left over meat the next day, chopped some into baggies and froze for the dogs, and when hubby went to bed I chucked the left over pudding, cake, cream, sweetened condensed milk, etc etc in the bin!

We could all loose 5kg! It's time to get to it!

But I already have the five kg lighter clothes, my wardrobe is sectioned! Fit, happy, fat! 5 offgetsme happy clothes, 7 off gets me fit and Flirting!

Mums home made cheesecake, I ate the last third of that last night, furgen amazing!

So glad I didn't listen to the missus and left a bit of stuff frozen that I knew we'd never eat.

My sister made a Toblerone cheesecake for my nephews 21st.

A+.

Toblerone also makes for a nice mousse which I've had before.

I won a 5kg bar of toblerone for a work display I did once, used most of it to make toblerone cheese cakes, yes they are amazing!

Back on track, I diced up the leftover roast Pork shoulder and made a pork and 3 bean chili. Been simmering for 3 hours, tastes yum.
