Spaghetti with a vegetarian sauce.
Sauce:
Onion, a little bit of garlic, grated carrot (for the sweetness), diced zucchini, mushrooms thickly cut, can of tomatoes, tomato paste, fresh basil & about 6 or so kalamata olives diced into small pieces (for the salt & sharpness). Fresh lightly grated parmesan & a fresh garden salad.
Pasta:
Used the new Jamie Oliver thin yummy spaghetti.

I made Pork and Beans.
Read about it, heard about it, sounded good but I couldn't find a recipie that I liked, so I made one up out of 3 or 4 different ones and it worked an absolute treat.
Smallish pork shoulder cut in half (one I used was 1.3kg)
I packet of dried cannellini beans , reconstituted by putting in a pot of cold water with some seasoning, bringing to the boil, then turning off and leaving to sit for about 2 hours.
Rub some hot cajun seasoning into the pork and sit aside for a while. Put the 2 pieces of pork into a slow cooker. Mix the drained beans with around a cup of BBQ sauce, couple table spoons of brown sugar, decent glug of apple cider vinegar, garlic salt and cayenne pepper and pour over the pork.
Cook on low for 8 hours. I put it on late Saturday night and turned it off Sunday morning.
Lift the pork out, discard the rind and shred the meat with two forks, tip the shredded meat back into the beans and mix through.
Spicy, sweet and smoky flavour, very filling. To quote my son, "looks like shit but tastes sensational". Serve with crusty bread and sleep alone that night. _________________ Every dead body on Mt Everest was once a highly motivated person, so maybe just calm the **** down. |

Nice cooler Sunday, kicking back after a torrid couple of days.
So, tonights menu:
Home made beef and vegetable soup
Roast Lamb with Rosemary and garlic. Sides are roast potato, pumpkin, sweet potato, beetroot, and steamed broccoli and cauliflower with grated cheese and peas, zucchini and carrots with butter and honey.

Baked chicken with ricotta for me and junior, bit of tasty for hubby, and grotty, baked sweet potato, and steamed veg, noice.

After the freezer malfunction last week that cost me a lot of frozen meals, I got cooking yesterday making up some stuff I can take up to mums for her to keep in the freezer. I half filled the freezer with home cooked meals before she got home from hospital after doing her hip, she's eaten all those.
So, 4 lots of braised steak and onions with rice and veges, 4 lots of apricot chicken with rice, and 4 lots of curried lamb chops with veges.
Now got a 3.8kg leg of lamb in the oven. the leg, I'm reliably informed, was removed under a general anesthetic and the lamb is recovering well and is expected to be fitted for it's prosthesis in coming weeks.
So that leg, along with a bunch of veges should feed the horde for dinner tonight and get me a few roast frozen lunches for mum. _________________ Every dead body on Mt Everest was once a highly motivated person, so maybe just calm the **** down. |

Called into the Local IGA for milk and stuff already had some chops out for dinner but they had Roast Chooks going for $5 so it's roast chicken and vegies tonight. |
